Chipotle Chicken & Broccoli Alfredo

Ingredients
- salt and pepper, to taste

1 lb. penne pasta (or your favorite pasta)

2 c. broccoli florets (or 1 bag of frozen broccoli)

1-2 Tbsp. oil/avocado oil

1 lb. chicken breasts, cut into chunks

2-3 tsp. Rosebud’s Chipotle (depending on preference)
- 2 Tbsp. butter
-
2 tsp. Rosebud’s I Love Garlic
- ½ c. chicken stock
- 2 c. heavy whipping cream or half-and-half
- 8 oz. shredded Parmesan cheese, divided
Directions
Preheat oven to 200°F.
- In a large pot, bring 4 quarts of water to a boil.
Add pasta until al dente.
- Remove pasta and reserve the cooking liquid in the pot.
Bring the cooking liquid to a boil and add the broccoli and blanch until just tender and bright green (about 1-2 minutes). Immediately drain and plunge in a bowl of ice water to stop the cooking of the broccoli. (If using frozen broccoli, pour out the cooking liquid until about 1 inch left in the pot and steam the broccoli until fully cooked.)
Next, heat a large skillet with r. and season the chicken breasts with the Chipotle seasoning.
Season the cut chicken pieces with the Chipotle seasoning and add chicken to the skillet once it is hot enough. Sauté in the skillet until fully cooked through. Transfer the chicken in a dish with a lid to keep warm.
- Melt butter in the same skillet over medium heat. Stir in the I Love Garlic for about 30 seconds.
- Whisk in the chicken stock for about 2 minutes. Then whisk in the heavy cream and simmer for about 2 minutes or until it has started to thicken.
- Fold in the shredded parmesan cheese and season to taste with salt and pepper.
Pour the pasta, chicken and broccoli in the skillet and toss gently until evenly coated.
Dish out individual servings, and garnish with the extra parmesan cheese. Enjoy!
