Citrus Salmon Pesto Pasta

Ingredients

4 salmon filets
- 1 Tbsp. olive oil, for drizzling

2-3 Tbsp. Rosebud’s Lemon Pepper
- 1 lb. pasta of choice
For the Pesto:
- ½ c. toasted pine nuts, or nut of choice
- 2 Tbsp. lemon juice
- 1-2 cloves of garlic, minced
- ½ c. freshly grated parmesan, divided

1 large bunch basil, fresh (about 2 cups)

2-4 Tbsp. olive oil
Directions
Lightly drizzle salmon with oil and season with Rosebud’s Lemon Pepper; then set aside.
- In a food processor or blender, combine the lemon juice, garlic, toasted nuts, ¼ cup of parmesan, and pulse until just combined.
Drizzle in olive oil and blend. Continue adding oil until a smooth puree appears. Once blended, set aside for later.
In a large pot, add water and bring to a boil. You may salt to add a touch of flavor.
- Add pasta and cook until al dente. Be sure to reserve 1 cup of water when draining.
In a large skillet, heat the oil and place the salmon (skin side down). Flip halfway through cooking until it’s reached 145 degrees.
In the same skillet, add your cooked pasta and pesto sauce. Slowly add the reserved pasta water to thin the sauce to your desired consistency.
Garnish with parmesan, fresh basil, and a lemon wedge (optional) and enjoy!
