Ingredients

3 Tbsp. olive/avocado oil

2 c. butternut squash; peeled, seeded, ½ inch cubed

1 tsp. Rosebud’s Sassy Salt

1 lb. choice of ground meat (we love venison!)

2 tsp. Rosebud’s I LOVE Garlic
-
2 tsp. Rosebud’s Sausage Mix
-
6 oz. spinach
-
1 c. heavy cream
-
⅓ c. parmesan cheese, shredded
-
8 oz. farfalle pasta (bow tie)
-
salt and pepper, to taste
Creamy Pasta & Sauce
Directions
Preheat oven to 400°F
In a large bowl, toss butternut squash with oil, pepper, and Rosebud’s Sassy Salt.
Spread the squash on a parchment-lined baking sheet in one layer, without overcrowding. Roast for 30 minutes.
While that the squash is in the oven, take a large skillet and heat 1 tablespoon of oil over medium heat. Add your choice of ground meat and cook until it’s no longer pink.
Add the Rosebud’s Sausage Mix and I LOVE Garlic to the cooked meat, stir, transfer to a separate dish and set aside.
With that same skillet, add a little bit more olive oil and cook down the spinach on medium heat for about 6-7 minutes, until the spinach starts to wilt.
Add the heavy cream to the skillet. Bring to a boil and immediately reduce heat to a low simmer.
Add the shredded parmesan cheese while the sauce simmers, stirring constantly, as it thickens. Add salt and pepper to taste.
In a medium pot, boil the pasta until al dente.
Add the drained, cooked pasta and prepared meat to the creamy spinach sauce in the large skillet. Top with the roasted butternut squash and serve.
