Ingredients

2 tsp. coconut/olive/avocado oil or butter

1 tsp. onion powder

1 tsp. garlic powder

1 tsp. ginger powder

1 Tbsp. Rosebud’s Sami’s Curry

1 tsp. red chili pepper flakes (optional)

1 (15oz) canned pumpkin (or 2 c. cooked pumpkin puree

2 C. Chicken or Vegetable Stock

1 tsp. Baja Gold Sea Salt

1 (13.5oz) can coconut milk

1 Tbsp. raw honey

salt & pepper, to taste
Directions
Heat the coconut oil over medium heat and add in the onion. Cook while stirring occassionally for a few minutes, until onions are translucent and starting to brown.
Add in garlic, ginger, and Sami's Curry, add red chili flakes if you would like some heat in the dish. Stir and cook for a minute or two, until the spices are fragrant.
Add in Pumpkin, stock or broth, and sea salt, then stir together. Turn the heat to low and simmer for about 5 minutes, stirring occasionally so that it does not burn at the bottom.
Carefully mix in the Coconut Milk and honey, and bring back to a simmer for a couple minutes. Add salt and pepper to taste before serving.
Recipe Note
- Great as is, served with bread or crackers, or garnished with pepitas, Pumpkin seeds, or other seeds and nuts. Cooked meat and veggies could be added for a heartier stew.
- Refrigerate any leftovers after it cools.
