Ingredients

1 tbsp. butter or olive oil

2 large bell peppers, seeded & coarsely chopped

1 medium onion, coarsely chopped

1 zucchini, coarsely chopped
-
1.5 lbs chicken breasts or thighs, cut into 1” pieces
-
1.5 c. quinoa, uncooked

3 c. chicken stock
-
2 tsp. Rosebud’s Lemon Pepper
-
1 tsp. Rosebud’s I LOVE GARLIC
-
salt & pepper to taste
-
2 bay leaves
-
fresh parsley, for garnish

Directions
Preheat large deep skillet or a Dutch oven on medium-high heat and add butter or olive oil to coat. Place chicken cuts in skillet and sauté for 5 minutes, stirring a few times. Transfer to a bowl and set aside.
Place another tablespoon of butter or olive oil and add zucchini, bell pepper, onions, and cook for 5-7 minutes, stirring occasionally.
Add chicken back in, quinoa, stock, bay leaves, lemon pepper, I LOVE Garlic, and salt & pepper; stir. Bring to a boil, cover, reduce heat to low and cook for 20 minutes.
Turn off heat. Add parsley, stir and serve hot.
