Ingredients

2 lbs. sweet potatoes (2 medium-large or 3 medium)

2 Tbsp. avocado/olive oil

Rosebud’s Rustic Salt, to taste
Directions
Preheat oven to 425°F. Line two large, rimmed baking sheets with parchment paper to prevent sticking.
Peel the sweet potatoes (or keep the skin on - whichever your preference) and cut them into fry-shaped pieces (about ¼ inch wide and ¼ inch thick).
Place in a bowl and drizzle oil over the fries and toss until the fries are lightly and event coated.
Transfer half of the fries to one lined-sheet and the other half to the other lined-sheet. (This ensures even baking and a good crisp.)
Bake for 20 minutes with one pan on one rack and the other on another. Once the timer goes off, flip the fries so they can cook on all sides.
Place back into the oven but switch the pans to the opposite baking rack. Bake for 10-18 more minutes, or until crispy.
Once done, toss the baked fries in Rosebud’s Rustic Salt, to taste. Serve warm with your choice of dipping sauce!
